Almond biscuits – Cantucci

Ingredients for six servings

  • Almonds
  • Flour
  • Eggs
  • Sugar
  • Butter
  • A package of baking powder
  • Salt


Beat the eggs well with sugar, then add the flour, baking powder and a pinch of salt. Lightly toast the almonds and cool; add to the dough.

Shape the dough into thin loaves about three fingers across; butter and flour a flat baking pan and place the loaves a fair distance apart. Brush with a beaten egg and bake in a moderate oven for about 15 minutes.

Remove loaves from oven and cut them across into biscuits; toast them in the oven for another ten minutes.
