Rabbit stew with Colonnata lard and grappa


  • Rabbit
  • Grappa
  • Thyme
  • Garlic
  • Sage
  • Olive oil
  • Cherry tomatoes
  • Colonnata lard


Bone the rabbit and chop into small pieces. Marinate in the grappa for about three hours.

Cook in a frying pan with a drizzle of oil, add the other ingredients and cook for about 35 minutes. Serve hot.
